Groovy’s Granola

  • Okay, so this recipe has a ton of ingredients which is typically a red flag for me BUT execution and directions are a breeze, so I promise it makes up for it! Also, it’s granola - if pecans aren't your thing, skip them or add something you do like! The photo on this page I substituted pepitas for pecans. The most important tip is to double or triple this recipe around the holidays for easy neighborhood gifting - I regret it each time I make a solo batch.

  • 2 cups rolled oats

    1/4 cup chopped pecans

    1/4 cup chopped or whole almonds

    2 tbsp flax seed

    2 tbsp chia seeds

    1/3 cup maple syrup

    3 tbsp coconut oil melted

    2 tsp vanilla (or vanilla bean paste)

    1 tbsp cinnamon

    1/2 tsp nutmeg

    1/3 cup nut butter

    Drizzle of honey (at your discretion)

    Maldon salt flakes

    1. Preheat oven to 350 degrees while you combine all wet ingredients

    2. Mix them in a big bowl into all of the dry ingredients

    3. Spread thin on a baking sheet lined with parchment paper and finish with some salt flakes

    4. Bake until crisp (my oven is about 25-35 mins depending on how thin my granola is!)
