Pimento Cheese

  • I used to travel often for work and each time I traveled I never took a meal for granted.  I would rather starve than waste my calories on something mediocre.  One of the first times I visited Atlanta I found this little brunch spot where I ordered a fried green tomato and pimento cheese sandwich and a coffee.  The sando was a homerun, fantastic.  The coffee… arrived in a French Press and I had no effing idea what to do with that.  Either Ross made my coffee or I pushed a button on an espresso machine at the winery.  I spent most of the meal googling how to get my coffee out and I regret not giving more intention to remembering how good my sandwich was. 

    The most important part of this recipe is to make it homemade and ENJOY IT.  It isn't the healthiest snack so you might as well get some dopamine benefits from it.

  • 1 small jar of pimento peppers chopped

    1.5 - 2 cups sharp cheddar cheese grated

    1/2 cup mayonnaise (I like avocado oil mayo or you can sub or mix Greek Yogurt or crème fraiche if you are a mayo hater)

    Garlic powder

    Salt & Pepper

    1. Combine peppers, cheese and garlic powder into a bowl.  Add in mayonnaise a couple tablespoons at a time, stirring between.  Can adjust mayonnaise additions (more or less) to meet your desired consistency.  I like mine the consistency of cold peanut butter (thick, not runny).

    2. Serve with crackers, spread onto a sandwich or save some for my French Fry taco recipe!
