Rice Balls

  • We cook jasmine rice frequently at our house and when I do, I use a trick I learned from our nanny - I make 'rice balls' for the kids. Their tiny tummies turn into bottomless pits when it comes to rice balls. I barely have enough time for the rice to cool before they're chanting "more rice balls please, more rice balls please". Rice balls are clutch because they can pick them up and eat them like a little apple with less mess. You'll probably still have a few dozen rice grains to pick up off the floor, but not like a thousand…

    The most important tip about rice balls is to make about twice as many as you think your kids are going to want.

    1. Cook your rice over the stovetop like you normally do (2 parts water to 1 part rice) but make sure that you DO NOT RINSE THE RICE before or after cooking - you need the starches for the balls to stick.

    2. After the rice is cooked, use a soup spoon to scoop a tablespoon or two of rice out and let it cool for a bit.  My kids are so impatient I usually rotate three spoons on this step…

    3. Put the rice onto a piece of saran wrap and pinch/pull the wrap tight around the rice until its into a little ball where all the grains stick together. 

    4. Serve & let them enjoy!

    5. More rice balls please.
